Sushil, the director of Mishthan Bhandar, says that there is such a great demand for this Jumbo Rasgulla that he had to get a machine installed here. He says that the pure milk of the local cow makes the rasgullas made at his place tasty, which use the milk of his own dairy farm to make these rasgullas. Due to the demand, he has got a machine installed from churning milk to shaping rasgullas and three to four artisans are engaged in making jumbo rasgullas from morning to evening.

This is how sponge rasgulla is made

Panne Singh, the artisan who makes Sponge Rasgulla, says that first of all, pure cow’s milk is required. Then that milk is heated and churned with a machine. Later after cooling slightly the milk is curdled with normal sour water. Then the chhena is extracted by filtering it with a cotton cloth. Then this chhena is churned in a dish, then the shape of plum is given by machine. Then it is put in the sugar syrup being cooked on the furnace. Rintha is put to boil. It is cooked in sugar solution for about 20 minutes on a high flame. Then it is soaked in less sugar syrup.

After resting for about 20 minutes, the sponge is ready. After about two hours, this Rasgulla becomes ready to eat. Panne Singh, the artisan who makes Sponge Rasgulla, says that the process of making it takes about an hour. After it is ready, this sponge rasgulla ball size means one piece of rasgulla is ready of about 100 grams. The cost of one piece is Rs.15.
